Almond, this little ‘look like nothing much’ nut, is a wonder of a food ingredient in a normal yet, busy cooking and baking day.
Most people don’t know that but… you can do almost anything with an almond. Turn it into powder and it becomes what we call ‘ almond meal’ (as fine as flour), and can be use in recipe calling for flour.
Of course, it will take some adjustment here and there to end up with the desire beautiful creation but I am not going to repeat what is already out there on the internet : an astronomical amount of recipes calling for almond meal.
So usually, I crush my own almonds using a blender or coffee grinder but last Saturday, on my daily search for this and that, I stumbled upon those two bags of already made, crush and dice almonds!!
Needless to say, for the next days or so, I will be digging in my blog and re-doing some of my favorite recipes using the almond meals.

This little crepe is a wonderful handy food to have around and it freezes so well, you can make tons of it, without filling and have it for either breakfast or dessert, depending of the filling used. In this particular batch, I used blue cheese instead of the regular cheese called in the recipe.
