Brownies My Way of Eating

Recipe to come after my Sunday pm movie date
(Miss Pettigrew Lives for a Day)… great one!

Ok here we go : I will make them again today, as I ate them all (in a baggy at underneath my coat, at the movie). Well why not? It is less expensive and way less fattening than those M&M covered peanut choco:

2oz of chippits chocolate

1/4 cup of butter

1 cup of splenda (artificial sweetener)

2 eggs

1tsp of vanilla extract

1/4 cup of almond grounded to a powder (use your coffee grinder). This will become what we call : Almond meal, replacing the white flour in cakes.

pinch of salt

1 cup of walnuts broken up

1 scoop of vanilla protein powder (choose the one with less than 3g carb per scoop, read the labels…)

Mix it all together, drop in a very well greased 8×8 pan, bake at 350F for 25 min

Now, be creative here, you could add dry raisins, etc…. Up to you!

Strawberries & Spinach Salad

Eating my way is back, full force! I went to the grocery store earlier today and because I don’t really cook with a recipe, I just went lurking in the veggies and fruits section to see what they have in special, during this wonderful spring season. Well surprise, I got strawberries and baby spinachs on special!
This is mosthly how I cook… I make sure I always have the side ingredients to my likes and then, I cook and always come up with wonderful dishes. The side ingredients here are : poppy seeds, almonds, vinegar, artificial sweetener and cheese.
Now, if you are not a low-carb eater, make sure you do this recipe. Wonderful non-descriptive flavor and taste, like nothing you have tasted before. You can ajust the sweeteness of the vinegar to your likes.

Ingredients for the salad dressing :
1/4 cup of white vinegar
1/2 cup of artificial sweetener (I use splenda)
2 tablespoons of olive oil
2 teaspoons of poppy seeds
Pieces of almonds
Grated cheese (I used goat cheese)
Dash of paprika and pepper
Mix together and keep aside.

For the salad :
2 cups of sliced fresh strawberries
1 small bag of baby spinach (fresh)
Drop the spinach and strawberries in a bowl, add the dressing to your likes and cover the salad with more cheese and almonds. A very good salad, one that you will want to keep for yourself!

Never trust a Slim Cook?

Let me say it loud and clear : I’m a huge believer in low-carbohydrate eating and I’m a Slim Cook!
Low-carbohydrate diets or low-carb diets are dietary programs that restrict carbohydrate consumption usually for weight control. Foods high in digestible carbohydrates are limited or replaced with foods containing a higher percentage of proteins and fats. If you want to feel slim around your waist line, cut down on your intake of carbs (flour, bread, pasta, rice, potatoes, etc…). You will be amazed, just after four consecutive days, of the slimness you will have, and this is without mentionning your face : your eyes will be more open, your skin will feel softer and you will have an overall of healthier being.
My heart and soul of my low-carbohydrate is meat (fish, poultry, beef, etc…), eggs, olive oil and veggies. There is no finish line for me, whatever I do to keep me slim and healthy, I have to do it for the rest of my life. I don’t believe in trash diet, going faster to the finish line, loosing it all and then, saying to myself, ok, lets eat now. NO! Eating is feeding your body with healthy food. There is no miracle way of doing it. Take responsible action : look at yourself in the mirror and say to yourself, I know how to stay slim and healthy, I have the solution inside of me, I just have to believe in myself.

Breads, cookies, muffins, cakes and the like : eat them once in a while, don’t eliminate them from your life but don’t fill up your kitchen with them either.. be sensible here, you are a very smart person… After all, you know what make you sick or what make you healthy, not a diet book or a diet program…. YOURSELF ONLY PUT YOUR FOOD INSIDE OF YOU NOT THE BOOK

Stop all that insane diet thing, pay attention to your own body and write down your own way of eating. Sale it if you want, make money with it if you want (after all many do) but never forget to use this way of eating on yourself. After all, you know best what is good for you, not others…

That been said, try new dishes and use your new found energy to help others. Focus on making your low-carbohydrates lifestyle just as enjoyable as it can possibly be.

Here is a wonderful plate of appetizer (without the starch crackers…), enjoy :

Strong cheddar cheese
Ground chicken mixed with homemade mayonnaise*(recipe included at the end of this post)
Wash the endives and divide them in single leaf. You will be able to use them as a scoop to eat any filling you have on hand (ground chicken mixed with homemade mayo).
Place the endives, cheese and apple on a plate. Serve them with the chicken mix. Enjoy!

My homemade mayo : make a quick mayonnaise in just moments :

1/4 cup of liquid egg product (come in container in the milk section of your supermarket)

1tablespoon of fresh lemon juice

2 teaspoons of dijon mustard

1 cup of olive oil

salt, pepper and a dash of artificial sweetener (taste the mayo as you are making it in order to adjust the taste)

Mix everything together with a hand mixer and voilà! Keep very well in the fridge for about a week or so.

After having spent the last, lets see we are Friday… so since last Tuesday… that make : 4 days…

So after having spent 4 days on the net and the phone in changing all my adresses, I think it would be easier just be a dog and sleep all day…

Gosh, I don’t feel my eyes anymore. You know, for people moving just a bit from time to time, you would just jump right in my blog and tell me : no, it was easy for me to do, just a plug and play… But no, it is not. Now they have that new option they call : EPost, yah sure but it takes about two hours just to enter 3 adresses in and the system EPost take 3 to 5 weeks before stopping your paper-envelop-bill delivered to your home address.

Changing addresses with the banks? Forget it, they ask you so many questions that you are sure to miss one and bam…, you are not the person you are to them at the other end of the line. And to top it all today, this is Good Friday, so most of the bank phone lines are closed for the holiday. Back to square one for me.
I just came to a conclusion : I will cancel all my credit cards and renew them so they will have a new address, ah how smart is this one?

The Daffodil are out and enjoying the beautiful sunny day today, on this part of the planet, I think I will just close everything and go for a walk. Maybe my dog will take the position of walking me and letting me just be me… after all, a dog doesn’t have an interac card…

Balsamic, Cream and Hazelnut topping

Over the last 26 years, I have moved around the globe, never spending more than 3 years at the same location.

Now, I’m talking Moving big time, from country to country. Like my brother told me the other day, his address book has more than 4 pages just for me, keeping all my old addresses.

So been here now, for the last 36 hours, I’m immerging myself completely in the food department. I am fascinated by all the products this country offers to the public: things that I have seen only on the internet or in magazine. I can easily spend half a day, going around a grocery store and reading all the products’ labels. People native to this area don’t realise what they have.

That been said, today, I found the ever popular DaVinci syrup (sugar free). Not too many stores carry this product but to me, it is a dear one to be founded here.

You can search on the net for all the descriptive and advantage of this product so I won’t write long about this one.

I will use it for: a drop of sweet in my coffee in the morning, drop in my daily shakes to add flavour, a drop in topping dessert and in just about anything I want to taste the sweet without actually adding the sugar in it. A little goes a long wait, so don’t use too much.

Let me share with you my recipe for fruit topping, using this syrup. The balsamic vinegar added to the whipping cream makes the cream whipped in record time so be carefully on how much you add here.

Balsamic, Cream and Hazelnut topping for little fruits:

Balsamic vinegar
Whipping cream
DaVinci Hazelnut Syrup – sugar free (any other flavours will do)
Little fruits (blackberry, raspberry, etc…)

There is no quantity here, just taste it as you go and adjust the sweetness along.

Put about one cup of cream in a bowl, add about 1tsp of balsamic vinegar and about 1 tsp of syrup. Mix together, taste it and adjust it. The balsamic vinegar gives a tang to the sweet topping. Enjoy!

Wired modem, no network established inside the house and an internet connection through the tv cable… ah….
This is what was waiting for me in my temporary living quarters, after I have spend the last two weeks, moving from 2 countries to a third one. Yes, I know, I like interesting assignment…
Oh boy… it has been many years since the last time I saw a wired modem. You see, I have been living in Mexico for the last 22 months and believe me; Mexico is at the door of new technology.
Because they want so much to move on the market of the future, all they install in new homes are always the latest in technology. No crappie stuff, everything is up there.
So when I moved to Mexico, attached to the main phone of the house was a high tech wireless modem-broadband, full of buttons on it and it came with a big book to read. Needless to say, I also had a tech guy with his cellular phone info, attached to the book, in case of emergency.
It didn’t take long to connect me and the three others computers that came with me in my suitcases (by the way, always carry your computer inside your carry-on, on the plane with you. I made the mistake to move my computer from my carry-on to my big suitcase and have it check-in : well, the suitcase never made it to destination and I lost everything. Of course, as I’m writting this article, somebody is playing with my computer and wearing my Tilley hat…. ).
I was able, in just a few hours, to set a wireless network and to also connect my international phone to the wireless modem, with no problem.

Well, here, in USA, where I’m sitting, the in-house modem is wired… to the wall, behind the tv….AHHHHHHH.

When I phoned the internet provider, he told me: just plug the Ethernet wire in your computer and you are all set. Yes, I agreed but the thing is, I have to stay wired to the modem because it is not a wireless thing so I spent all day yesterday sitting on the floor, never more farther away than 2 feet because of the wire. And on top of this, this wired modem doesn’t recognize my international phone connected to it, and I’m not even mentioning my wireless printer.

So been the smart person that I am, at the end of the day yesterday, my husband and I went to get a wireless router/broadband to connect, without a wire, my modem to my network team.
When I got to the store, I explained to the young sale man what I was looking for by displaying in his hand: my home modem and my international phone that I have previously dropped in my big purse. Because been a woman, I have learned over the years that if I don’t show them right from the start what I know about computer and technology, they won’t listen to me, a woman…
The young man was impressed and made a sale of a wireless router/broadband.
Before leaving the store, he said to both of us: You guys are so On!
(yes, we are but just because we move so much all over the globe, we have learned to buy universal technology and saving us time and money, without mentionning frustration…)

So much snow…

Last time I saw so much snow was in 1969. But now, we are in 2008, March month and it is still snowing almost everyday. As I am in transit between three country and I am spending just at few days here, in Quebec, I am amazed at the quantity of snow they have.
