Tu bi’Shvat Cake

Dry plums, dry mangoes and dry cranberries mixed with whole walnuts make this a wonderful cake.  It takes just so little flour that I would describe this cake a fruit and nut slice.  A very good one.

Just a very small slice served at an afternoon tea will win any heart.  And yes, it takes the full 90 minutes to bake ok?  Here is the recipe taken from David Lebovitz site

I did some modification to the original recipe from David and here is another version of this fruit and nut cake.

So here, lets give it a try, of this cake with very little flour and sugar in it!

60 g flour
60 g sugar
3 eggs
1/2 teaspoon ground cinnamon
1/4 teaspoon ground nutmeg
1/8 teaspoon ground cardamom (I love this spice)
pinch of ground cloves
pinch of salt
200g of dried fruits; any combination (I used plums, mangoes and cranberries), and 150g of nuts (I used walnuts cut up)

Tu bi’Shvat Cake

Mix all the ingredients together, drop the mix in a greased baking pan and bake for 90 minutes, at 150C.
