Naturally speaking, lemon and apples go well together.
Lemon stops the apples from going brown in color, when this one is undressed from her skin!
White cream cheese goes well with apples. Cheese in general, all kinds, add a certain flair to an apple, a good relationship here.
Coconut and apples, not so much of a relationship but since I had discovered an enormous stash of coconut here, and I need to use it, why not to add it to my pie today?
And in this particular recipe, I used this pie dough recipe:
which is the Maury Aubin pie dough. This particular recipe used butter and shortening. It gives a particular roasting look to the finish product and because it is not 100% made of butter, the dough holds it shape better when rolling it.
Now, because I am all mixed up in what I did add to this emotional pie, lets catch up with the ingredients here:
Pie shell, check!
Lemon curd, check!
Apples, sugar and cinnamon, a bit of flour mixed all together, check!
Coconut flakes, check!
Cream cheese on top of the apples, check!
More pie shell, covering the apples, check!
Brushing milk on top of the pie shell, check!
A good sprinkle of coconut flakes again, on top of the pie shell, check!
Bake at 200C, for about 30 minutes.
Test if the apples are cooked before removing the baked pie from the oven, check!
