I am in the making of Gyro today, using lamb meat, and out of the blue, here, I cannot find pita bread so…. La Belle Aurore decided to search a bit and to experiment, as a true french lady would do and… just bake pita bread, homemade.
I used the recipe for the dough pizza here. The shape of a pita bread is created in the process of the making.
After the dough has risen once after making the recipe of pizza dough, shape the dough into two-inch balls and set these on a floured plate; let them rise for 15 minutes.
Then place them on the floured board and flatten them out with a lightly floured rolling-pin until they are about five inches around and 1/8″ thick.
Place the dough on a preheated cookie sheet in a 500-degree oven for five minutes. Turn the breads over and bake for an additional two minutes.
Remove the breads from the oven and poke the tops with a fork to release the air inside or leave it like that, the air will just evaporate and you will be able to just cut the pita in half and use it as a pocket if you want. Serve hot or let them cool. Store the bread in plastic bags.

Love this! Thanks for sharing.
