A gyro is a sandwich with meat, onions, tomato and tzatziki sauce, served in a pita bread.
I went to the local market today and the veggies display looked so colorful and appealing that I decided to make a sandwich of some kind and using my lamb meat I already had in the freezer.
My motto (general motivation) since living in the northern part of China is to make most of what I need (food here…) and not always buy, buy and buy. So I made pita bread, and I made the tzatziki sauce. The rest is history: spices of any likes here will complete this wonderful food.
Ingredients
Lamb meat, cut into small piece
olive oil
curry powder
cumin powder
rosemary
lemon juice
salt and pepper
Mix together and let marinade for a couple of hours.
In a blender, put the meat mix and pulse just a few time to get a nice ground meat with big pieces.
Form the meat into soulwaki by squeezing the meat on a skewer. Now, follow me here, once again I did not find any skewers here and I did not want to use the wooden ones I see on the streets either… So we used a coat hanger, cut them into shape and cover them with aluminium foil.
Bake the meat at 500F for about 8 to 10 minutes until nicely brown and crispy.
Drizzle the meat with olive oil if you want it to be crisper during the cooking.
Meanwhile, slice red onions very thin. Drizzle with lemon juice and mix with fresh parsley. Add a bit of salt, set aside.
For the Tzatziki sauce, mix equal amount of natural yogurt with shredded cucumber.
Add lemon juice to taste, salt and pepper, garlic if you want and cover the mix with a bit of olive oil.
Set aside.
Cut fresh tomatoes, mix with a bit of olive oil, salt and pepper, dry mint herbs, set aside.
To serve :
Take a pita bread, put the meat on it, drop tomatoes, onion mix, salt and pepper, a bit of olive oil and a dollop of tzatziki on top.
Roll the pita bread with the filling together.
Roll the pita on a sheet of wax paper or baking paper and serve on a plate with a half cup lemon. Enjoy this wonderful simple food.
