Ok I did it, this is my homemade bread made overnight yesterday and completed this morning by 10h30am.
I followed exactly Jim Lahey method, up to the ‘T’. I am saying ‘exactly’ because I have a tendancy to go my own way in cooking… but this method of making bread is unbeliably easy to do, and just he said : ‘A four year old child can do it…’
I started the bread at 3hpm on May 09, took just 5 minuts to mix it all. I left the mix on the counter top overnight and this morning, at 8ham, I continue the process he explained in his video.
At 10ham this morning, May 10, the bread is ready to be eaten.
Now, I did this bread using artificial instant yeast.
Oh, and I baked my bread not in an expensive oven dish but in my ever trustable ‘olla de barro’,
which comes with a lid, it is a clay pot (lead free) made locally here in Querétaro.
Today in pm, I will do another bread, using the same technic but replacing the artificial instant yeast by my sourdough starter. Let see now how it will turn out.
