1 to 2 to 3 here is my homade bread

Ok I did it, this is my homemade bread made overnight yesterday and completed this morning by 10h30am. 

I followed exactly Jim Lahey method, up to the ‘T’.  I am saying ‘exactly’ because I have a tendancy to go my own way in cooking… but this method of making bread is unbeliably easy to do, and just he said : ‘A four year old child can do it…’ 

I started the bread at 3hpm on May 09, took just 5 minuts to mix it all.  I left the mix on the counter top overnight and this morning, at 8ham, I continue the process he explained in his video

At 10ham this morning, May 10, the bread is ready to be eaten.

Now, I did this bread using artificial instant yeast. 

Oh, and I baked my bread not in an expensive oven dish but in my ever trustable ‘olla de barro’,

which comes with a lid, it is a clay pot (lead free) made locally here in Querétaro.

Today in pm, I will do another bread, using the same technic but replacing the artificial instant yeast by my sourdough starter.  Let see now how it will turn out.

    Since you were making Lahey’s bread, the lid on your olla de barro must fit very well. I’ve been looking for a Mexican pot to cook my no-knead bread in. Would you mind telling me where I might find one in Queretaro?

      Nice to hear from you, how is your SoFoBoMo 2010 project coming, the dates are approching pretty fast…

      As for my Olla de Barro, the best place I find to buy them are at the Saturday market Mercado Santa Rosa, here in Querétaro. They are sold with all the kitchen items displayed there, on the ground, beside all the food stands (turn them over, it has to be written ‘lead free’). I tried many lids for one pot, and found one that would sit very well on the rim of my pot. I actually got three Olla de Barro that day but I have to mention that I went there with a mexican friend and the price was ridiculous to say the least. Having gone there by myself, with my blond hair and my french accent, believe me, they would have made money with me. Also a good place to buy those pots are on you way to Mexico city, at San Juan del Rio, to your right, on the side of the main highway, you will see lots of pottery sales stands, all regrouped together, they are about 15 of them. They actually sale to the stores here in Querétaro. You could get great set of dishes for almost nothing there. It is located at about 25 minutes from Querétaro, direction North West, highway 57. Don’t forget you have to ‘cure’ your pots before using…to seal the pores and ensure that the first foods cooked in it do not taste of raw clay. Fill the dish to the rim with water, drop a full head of garlic and let it cook on low heat, until all the water has evaporated. Take care!
